We love these things, and your right you can put just about anything in an empanada. Like you I use the ingreds. you listed, plus some nice veggies,sauteed, 1 Tbl. Paprika, 1tsp. in and around a 1/2 c. fresh chopped flat-leaf Parsley; serves four, (if using 3/4 lb. of ground beef and 1/4 lb. diced veggies). I always use a well beaten egg to brush on the flaky pie crust to make golden and yumo-fabulous looking. Be sure to vent them w/ two 1-inch vents.
